Tiers is three hectares of intensively managed, closely planted, mature Chardonnay vines. Brian Croser selected the Piccadilly Valley at the centre of the Adelaide Hills in 1978 because it provided the best terroirs in which to grow Chardonnay for Petaluma and for Croser sparkling. Piccadilly is a homo-clime of Dijon in Burgundy. The Tiers Vineyard was the first site planted in the region since the nineteenth century and is at the centre of the Piccadilly Valley on 450 metres elevation, where the Petaluma Winery operates and Brian Croser lives. 1500 cases produced

Fruit is de-stemmed, crushed and chilled to 3ºC on the way to an air bag press. Cold juice is gravitated away from the skins through the press and only light pressings are added back. A small amount of SO2 is added to the juice on the way to the tank where the juice is allowed to settle over four days. The clear juice is racked to Vosges French oak barriques. A native strain of yeast and bacteria for malolactic are added. Primary ferments are complete in six weeks, yeast lees are stirred weekly until the completion of malolactic two months later. The wine is racked and returned to sit on lees. After ten months in barrique, Tiers is racked clear and prepared for bottling unfiltered. Alcohol 13.9%
  Varietal bouquet of ripe peach and melon. Subtle marzipan and brioche characters are derived from the malolactic, yeast lees contact and oak. A consistent terroir feature of Tiers Chardonnay is its very significant texture followed by a savoury finish and the persistence of flavours. Tiers will develop spicy honey and brulee characters as it develops. "One of the world's most experienced winemakers, Croser is clearly able to adapt and the oak on this sits beautifully, restrained and gently cashew like, allowing the pristine fruit quality to shine. Tapanappa Whalebone Cabernet Shiraz Franc 2006 - Buy Australian & New Zealand Wines On Line Tapanappa acquired and renovated the precious Whalebone Vineyard at Wrattonbully in 2002. The thirty year old Shiraz, Cabernet Sauvignon and Franc vines have responded magnificently. The paradox is that despite being cooler than Coonawarra, the fruit ripens earlier and more completely. The still air, cool night and warm days particularly suit the rejuvenated vines. Cabernet Franc performs well, which is not surprising given the similarity of soil, geology and climate to that of St. Emilion in Bordeaux. Winemaker Brian Croser, 1400 cases produced
