Charles Sturt University at Wagga Wagga saw its first plantings of vine in 1893. While today's students are very closely involved in the vitculture and elevage, the ultimate quality of wine is determined by a highly accomplished team of industry identities. Producing less than 10,000 dozen annually, the limited yields make possible, a highly selective sourcing of fruit and the most exacting standards of vinification. The result is a richly flavoured yet impeccably balanced accord of profound Cabernet Sauvignon structure in support of elegant Merlot succulence.
Charles Sturt University is an integral part of the nation's leading wine science school, completely at the forefront of leading viticultural advances and the world's best practice winemaking techniques. A backbone of Cabernet Sauvignon from excellent sites in the Hilltops region is enhanced by a component of fruit from the University. Merlot is sourced from the Charles Sturt vineyards at Orange and choice properties in Wagga Wagga. A harvest of very small berries exhibiting a concentration of dark fruit flavours is treated to a mix of new and old world techniques. The finished wine is matured for a year in a selection of seasoned and new French oak barrels.
Dark ruby scarlet hue. Blackcurrant nose supported by background oak and plum inspired licorice spice notes. An accord of exquisite harmony, the Cabernet defining perfect acid to fruit balance within a sound palate structure. Sweet blackcurrant and blackberry flavours are underpinned by well integrated oak, before a lingering finish on a length of fine, velvety tannins.

It is seen as important that the winery reflect the same environment as other commercial Australian wineries, being market driven and producing the quality and styles of wine that obtain ready acceptance from discerning wine consumers in the open market place.

The Charles Sturt University Winery is a producer of premium varietal table wines. It is an integral part of Australia's leading wine and food science school and as such is at the forefront of viticultural practices and wine making techniques. It is seen as important that the winery reflect the same environment as other commercial Australian wineries, being market driven and producing the quality and styles of wine that obtain ready acceptance from discerning wine consumers in the open market place.

The winery demonstrates an accountable commercial operation and provides stimulating training for those students fortunate enough to be employed (through a winery scholarship ). The wines are sold through the Cellar Door at the Winery and in selected premium wine retail outlets in each capital city of Australia as well as limited quantities being exported to the United States. Since the re-organisation of the Winery Management in 1991 sales of CSU wine have grown from 3287 cases to a budgeted 15000 cases in 2001. The winery focuses on its own range of premium table, fortified and sparkling wines and since its inception in 1977 has been awarded 23 trophies, 84 gold, 164 silver and 387 bronze medals in national wine shows.
