Tapanappa acquired and renovated the precious Whalebone Vineyard at Wrattonbully in 2002. The thirty year old Shiraz, Cabernet Sauvignon and Franc vines have responded magnificently. The paradox is that despite being cooler than Coonawarra, the fruit ripens earlier and more completely. The still air, cool night and warm days particularly suit the rejuvenated vines. Cabernet Franc performs well, which is not surprising given the similarity of soil, geology and climate to that of St. Emilion in Bordeaux. Winemaker Brian Croser, 1400 cases produced

The precious grapes are hand picked and vinified in separate batches. Grapes are de-stemmed, partially roller crushed and the must chilled to 3°C into one tonne fermentation tubs. A three day cold maceration precedes fermentation by native yeasts and hand plunging twice daily to break up the cap of skins. At the peak of fermentation, temperatures reach 35°C before exhausting all sugar after fourteen days. The wine and skins were sealed down for a further week of maceration before draining and pressing directly to French oak barriques. After completing malolactic the wines are sulphured then racked several times over a period of twenty months maturation. Bottled unfiltered after a light egg white fining. Alcohol 14.2%
  Dark garnet/ ruby colour. Cabernet Franc provides a floral aroma note and silky tannin texture and has much greater influence than the small component suggests. The Whalebone terroir exerts its strength in the Cabernet Shiraz blend as a combination of smokey eucalypt, anise and fresh earth aromas and flavours. Exhibits the fruit sweet core of ripe mulberry and blackberry provided by Cabernet Sauvignon and Shiraz. Notable for its clear and well defined, yet finely grained tannins. To accompany spring lamb or rare pigeon breast with fines herbes. Brian Croser selected the Piccadilly Valley at the centre of the Adelaide Hills in 1978 because it provided the best terroirs in which to grow Chardonnay for Petaluma and for Croser sparkling. Piccadilly is a homo-clime of Dijon in Burgundy.
