	A deluxe Chardonnay Cuvée in collaboration with parcels of elite Marlborough Pinot Noir, grown to the best vineyards in the Wairau Valley. Soils vary from stony free draining gravels to fine silt loams containing some clay. Vineyards are planted at a density of 1850 vines/ha and in an average year yield nine tonnes/ha. 	Each $29.99 Dozen $359.88	The vines are trained to a standard vertical shoot positioned canopy. Several different clones of Chardonnay and Pinot Noir are pressed without crushing. The juice is given a short period of settling which is followed by racking and inoculation to a pure strain of Montrachet yeast. The base wines are fermented and aged in a mixture of tanks, large oak vats and small French oak barrels. Following a spontaneous malolactic fermentation the wines are left to age on lees for a further eight months prior to assemblage. The Chardonnay component is put on tirage using prise de mousse the following February and subsequently allowed to attain a minimum of two years lees ageing in the bottle before disgorgement
	Pale straw in colour with a fine and persistent bead. Aromas of ripe citrus fruits proclaim the predominance of Chardonnay. A bouquet of apple and lemon complements fresh bready notes derived from two years bottle ageing on lees. The deliciously crisp palate displays toasty, creamy complexity, enhanced by a lingering nutty finish. The tradition dates back to 1770 when Cloudy Bay was discovered and named by Captain Cook. Made in limited quantities and released at four years of age, Pelorus is one of New Zealand's flagship wines. The Chardonnay and Pinot Noir grapes are sourced from distinguished Wairau Valley vineyards bearing soils which vary from young, extremely free draining gravels to aged alluvial loams containing some clay. The finished wine is tiraged with a prise de mousse yeast before ageing on lees for an extravagant three years prior to disgorgement

The first commercial release, available in very limited quantities. Grapes are sourced from the Brancott sub-region of the Wairau Valley where the soils are predominantly aged alluvial loams containing some clay. The fruit is grown on a two cane vertical shoot positioned (VSP) trellis, the vineyard yields an average of 4.6 tonnes/ hectare. Harvested on the 20th, 23rd March, and the 17th April under settled conditions, a challenging season was redeemed by an ideal autumn, producing a modest crop of ripe, concentrated fruit of exceptional quality

Cloudy Bay Te Koko Sauvignon Blanc 2007

The Cloudy Bay winemaking team suggested doing the unthinkable in vintage 1991. Why not ferment some juice with indegenous yeast, completely wild mcro-flora, untrained and uncultured? This was uncharted territory in New Zealand and only nature could decide the outcome. A few barrels were set aside for trial, the the juices quickly fermented into a pungent brew. Unperturbed, the winemakers let nature take it's course, and by spring the ugly duckling had morphed into a savoury complex wine of great intensity and voluptuous mouthfeel
