	Each $16.99 Dozen $203.88	Sauvignon Blanc has been selected from excellent vineyard sites throughout the Wairau and Awatere Valleys of Marlborough. The Awatere Valley contributes a steely and racy acidity, while the lower Wairau Valley vineyards provide powerful and intense fruit with lifted passionfruit. The upper Wairau Valley vineyards around the Delta area display ripe and refined melon citrus flavours. The fruit was harvested at various levels of ripeness to achieve a well balanced wine. Once crushed and pressed, the juices are naturally cold settled for several days before being racked clean to fermentation. A slow, cool vinification preserves the aromatics and freshness before the parcels are assembled into the final wine. Alcohol 13.5%
	Bright and vibrant pale green. Bouquets of luscious summer/ tropical fruits, hints of herbaceousness and grassiness. Bursting with lifted fruit salad aromas, passionfruit and sea breeze undertones. Mature and medium dry, this fine aged Amontillado is a blend of dry, sweet and traditional flor sherry components, with an average age of three years. It has been assembled from components of four neutral grape varieties including Palomino. Fruit is sourced entirely from long-term contracted growers in the Riverina. The Flor component is made using traditional Spanish methods, and is stored in old oak barrels (between five and forty years old) following innoculation with a film-forming yeast for a period of eighteen months

McWilliams Hanwood Oloroso Sherry

A rich and delicious effort, a mature, fully aromatic sherry. This fine aged Oloroso is a blend of sweet and traditional flor sherry components, with an average age of four to five years. The sweeter sherry portion is made by fermenting the free-run juices with a small percentage of the pressings. The fortification takes place gradually during the ferments, by the addition of no more than two per cent of a high quality neutral spirit at any one time, permitting the winemakers to arrest fermentation at precisely the desired level of sweetness

Awarded 3 GOLD MEDALS and made exclusively from Cabernet Sauvignon, picked extremely ripe to maintain the full sweetness of the style, and sourced primarily from McWilliam’s own vineyards in the Riverina wine region in New South Wales. Partially fermented on skins for eleven days to extract maximum colour and flavour, a high quality grape spirit distilled at the McWilliam’s Hanwood winery, near Griffith was added to the ferment in stages to assist with the integration of flavour. Receiving no oak treatment, this is a maverick fortified, brimming with riddles and complexities.
