Sauvignon Blanc has been selected from excellent vineyard sites throughout the Wairau and Awatere Valleys of Marlborough. The Awatere Valley contributes a steely and racy acidity, while the lower Wairau Valley vineyards provide powerful and intense fruit with lifted passionfruit. The upper Wairau Valley vineyards around the Delta area display ripe and refined melon citrus flavours. The fruit was harvested at various levels of ripeness to achieve a well balanced wine. Once crushed and pressed, the juices are naturally cold settled for several days before being racked clean to fermentation. A slow, cool vinification preserves the aromatics and freshness before the parcels are assembled into the final wine. Alcohol 13.5%
