	Essenze is a pure expression of New Zealand viticulture. From their bountiful vineyards near the heart of the South Island, the long, dry summers and abundant sunshine stimulate the vines to yield the most luscious white Pinot grapes. Sheltered from coastal winds by a low range of hills, the fruit ripens to perfection until harvest, determined on the basis of splendid natural sugars and complimenting acids, whereupon the Pinot Gris is picked by hand. 	Each $17.99 Dozen $215.88	The Waipara region is well known for the most ideal weather conditions throughout the growing season. Dry and warm periods are the consistent feature ensuring full physiological ripeness in the fruit. Vines are planted to chalky loam soils that are rich in limestone deposits, perfect for drainage and retention. The Pinot Gris is hand harvested and whole bunch pressed to allow a gentle extraction of the juice. The juices are naturally settled before undergoing a slow, cool fermentation which preserves the fresh, lifted, fruit aromas and serves to develop a rich and rounded, full palate. A period on yeast lees added texture and length before the wine was assembled, very lightly fined and bottled. Alcohol 14.0%
	Bright and vibrant green straw colour. Lifted, ripe peach and citrus notes with pear and spicy undertones. Ripe flavours combine with a full, rich and long palate. A rich and delicious effort, a mature, fully aromatic sherry. This fine aged Oloroso is a blend of sweet and traditional flor sherry components, with an average age of four to five years. The sweeter sherry portion is made by fermenting the free-run juices with a small percentage of the pressings. The fortification takes place gradually during the ferments, by the addition of no more than two per cent of a high quality neutral spirit at any one time, permitting the winemakers to arrest fermentation at precisely the desired level of sweetness

Partially fermented on skins for eleven days to extract maximum colour and flavour, a high quality grape spirit distilled at the McWilliam’s Hanwood winery, near Griffith was added to the ferment in stages to assist with the integration of flavour.
