	The ambassador of the Barossa, an exceptional Shiraz within it's range, ripe blackberry and plums with a hint of vanillan oak on the bouquet, these complexities carry through to the palate showcasing raspberry, spice and fine, pliant tannins. "The large Thorn-Clarke Barossa Valley vineyard provides grapes for other producers but their own wines are impressive. This is dense and chocolatey with concentrated blackberry and spice characters. 	Each $17.99 Dozen $215.88	Thorn-Clarke are one of the Braossa's most salubrious growers, supplying many of Australia's most popular labels. The best parcels of Shiraz are selected from the estate's Kabininge Vineyard. Grapes are crushed and destemmed, the juices run into open vats for vinification, pumped over twice daily to maximise colour, tannin and flavour extraction. A fastidious cooling regime is employed to ensure the ferments remain in the 22°C to 25°C range, preserving maximum expressiveness of the fruit. Pressing is conducted seven days after the crush, the wine is then transferred into a combination of new and prior use American and French oak hogsheads for an extended maturation of up to sixteen months. Alcohol 15.0%
	Deep red/ purple in colour. A lifted nose of clean blackberry fruit accompanied by cedar wood characters, the oak elements are complex and layered with mocha and spice. The palate shows sweet fruit characters dominated by blackberry and plum, complimented by sweet Indian spices, in particular tumeric and cinnamon. The sweet fruit characters are balanced by rich savoury elements. The middle weight palate is rich and mouth filling, finishing with finely grained tannins and great length of savoury fruit with oak. A rich and voluptuous wine filled with matching spice, drinking brilliantly now, Shotfire is moving from strength to strength, widely acclaimed internationally as the quintessential Australian Shiraz

Sandpiper Cabernet Sauvignon 2008

Named in honour of the remarkable migratory bird, which can be seen fossicking around the vineyard before flying to the northern hemisphere, sometimes as far as Siberia, before the chill of winter shrouds the Barossa. Sandpiper is highly regional, expressing the greener, more vegetable-like features of good Barossa Cabernet. A long spell under tightly grained French oak has developed liquorice, dark chocolate and blackberry profiles. Sandpiper sits lightly oaked, with a refreshing fruit drive as it undergoes extended yeast maturation. Sandpiper Pinot Chardonnay N.V

A handmade Methode Traditionelle sparkling from the Mt Crawford parcel, named after the migratory bird which visits the Thorn-Clarke vineyard. This site was specially selected as it is so ideal to grow the two grape varieties which respond to cold climate. 60% Pinot Noir and 40% Chardonnay grapes were picked at night and barrel aged for six months on lees to infuse the great depth of Pinot flavour. The result of the Thorn-Clarke's careful site selection and superb winecraft is a deep, guava coloured, full and yeasty Soth Australian sparkler brimming with body and hints of stonefruit.

Thorn-Clarke is one of the Barossa's largest and most highly awarded wine grape growers. Their Mount Crawford Vineyard up in the Eden Valley holds five hectares of choice Pinot Grigio vines. The grapes grown here translate into a spectacular Pinot Grigio wine which displays outstanding varietal character. The Sandpiper style is becoming ever more popular as people discover the fresh but round nature of good Pinot Grigio wines. Thorn-Clark nurture some of the Eden Valley's best Pinot Gris vines. Barrel fermented, richer and fuller than most Pinot Gris, currently only produced in very small quantities, an extended period on lees has brought savouryness and round, mouth filling body. "Barrel-fermented and lees stirred. Medium straw-colored, it offers attractive melon and orange peel/tangerine aromatics. At a time when the government was paying growers to pull vines in an attempt to curtail the oversupply, David Clarke was working against trend, testing soils and buying land (under car headlights to avoid local farmer suspicion) with the intention of establishing the best Barossa vineyards.
