	Croser is only disgorged when there is market demand, ensuring extended contact on yeast lees, which contributes to the enormous palate and texture. Croser is at once bigger in colour, and more intense in flavour, dominated by the ripe Jonathon apple of the Pinot Noir content, an impressive wine fashioned from sophisticated batches of fruit from the Piccadilly Valley, which is at the core of the Croser style. 	Each $31.99 Dozen $383.88	Fruit from the cooler south and west facing slopes of the Piccadilly Valley contribute impressive natural fruit acids with refined fruit flavours and aromas. Handpicked bunches are chilled in trays for forty eight hours before being gently whole bunch pressed extracting the delicate heart run juices. These are settled and racked prior to being fermented in old Vosges barriques with Petaluma’s own selected yeast strains for two or three months, prior to inoculation with Petaluma’s malolactic bacteria, used to soften the high acids. Secondary fermentation in bottle under the cellars of the Bridgewater Mill was followed by two years on yeast lees to develop the brioche flavours of the traditional method sparkling wine
	The qualities of Croser are its creamy persistent bead and its subtle, but intense, fruit flavours. Full and concentrated, with notes of honey and hazelnuts, combined with refreshing citrus and chalkiness. Warm flavours, the sweetened tones of marron glacé and caramel are offset by a lively and refreshing acidity. The palate is seamless and even in structure with richness and complexity of flavour, showing ripe fruit, melony butternutty and supremely satisfying. A solidly structured, mostly Pinot Noir wine with a slightly lesser proportion of Chardonnay, an assemblage of the current Croser vintage with components of reserve wines from several earlier years, each contributing distinctive qualities to the final cuvée. A stylistic evolution after many vintage releases, the aim being to refine and advance the unique flair of Croser while remaining true to the aperitif style of Vintage Croser.
