The long, late ripening conditions and continental climate of the Barwang Vineyard, marked by cold nights and warm summer days, produces red wines of considerable flavour, power and extract. Since the 1996 edition, Barwang Cabernet Sauvignon has claimed trophies and gold, with every vintage collecting at least one gold medal. "Strong blackberry and oak with further coconut elements. Barwang's Hilltop red wines consistently deliver rich, generous flavours. Cabernet grapes are picked at optimal ripeness and vinified in open top fermenters for a period of ten days. Once gently destemmed, the fruit was inoculated with cultured yeast and the juices pumped over four times daily for a period of four days. The fermenting juice was drained and returned twice daily until the wine was pressed off. To complete primary and malolactic fermentation the wine was transferred to new, one year old, and two year old French and American oak barrels. It was matured in oak for a total of sixteen months with four rackings taking place throughout the maturation. Approx 14.0%
  Vibrant red purple with crimson hues. Lively blackcurrant, licorice and chocolate fruit notes, with subtle varietal mint nuances. Generous lashings of nutmeg and mocha oak are also prevalent. Fleshy fruit driven wine with dominant flavours of cassis, licorice and dark chocolate. Shows ample structure from supple fruit tannins and nutmeg oak and finishes with lingering savoury tannins.
