	Fraser Gallop has successfully tamed the assertive tannins of good Margaret River Cabernet with the inherent mid-palate richness and softness of a smaller component of Merlot. From unirrigated blocks yielding concentrated fruit, treated to the latest Turbo pigeur technologie from France, a lavish process which can pump whole intact grapes without grinding pulp and skins, leading to better homogenisation and extraction, translating into a wine of great vigor. 	Each $16.99 Dozen $203.88	Hand picked fruit is destemmed with minimal crushing to keep the berries whole. Chilled to 8°C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, great for colour and flavour extraction. The wine was pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor the tannin extraction, before pressing off-skins in an airbag tank press. Pumped to barrel where the malolactic stage is induced. The wines were racked three times over a period of eighteen months in barrel, topped up of every two weeks. Fining trials to assess the final balance after which it was decided that the wines did not require any. Bottled after a polish filtration
	A youthful deep raspberry red colour with vibrant crimson hues, Fraser Gallop has an appealing colour and sparkle in the glass. The nose is quite fragrant, a pot pouri of rosewater, blackcurrant, brambles and dusty berry fruits. The palate reveals juicy layers of blackberry, blackcurrant and mulberry wrapped around a core of cedary perfumed French oak. It is fresh with brightness of acidity balanced by fine chewy tannins, quite cranberry like. Eminently drinkable now, the finest balance of fruit and tannin has been achieved. "Delightful elegant wine that opens with a lifted scent of mulberry and minty black currant. Well balanced and showing plenty of palate substance, albeit with a refined pose on the finish!" -West Australian

Inspired by the great Crus of Bordeaux, the aim was to build complexity within a single vineyard wine, to allow the fruit to shine, complemented by premium oak, while maintaining great structure and finesse. This has been done with the addition of small amounts Petit Verdot, Cabernet Franc and Malbec, and the use of a number of different techniques during fermentation. The Cabernet vines at Fraser Gallop are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavour

Fraser Gallop Semillon Sauvignon 2009

Fraser Gallop have set out to make the best possible classic dry white by delivering a mostly Semillon wine with a third of Sauvignon Blanc, effectively combining the fruit within a framework of good Margaret River regionality. An artisanal effort, inoculated to three separate strains of yeast, a proportion of the Semillon is barrel fermented in new Bordeaux French oak, markedly enhancing the structure and depth of flavours. This well balanced wine with lingering fruit and great complexity will keep you drinking till the last drop is gone
