	Each $19.99 Dozen $239.88	Tim Adams began work in the wine industry as a cellarhand at the Stanley Wine Company. He was encouraged by Mick Knappstein to earn a degree at Charles Sturt University, and embarked upon his own label in 1984, when cooper Bill Wray suggested a partnership. All components were fermented on skins to dryness before being pressed, with all pressings being returned to the wine. The wine spent twelve months in a mix of new, one- and two-year-old American oak at the Tim Adams coolroom before assemblage, filtration and bottling. Tim Adams has not been cold stabilized and so may form a harmless crystalline deposit in the bottle necessitating decanting before serving. Approx 14.5%
	Tim Adams exhibits a bright magenta colour. Aromas and flavours of red berry conserve, spiciness and the complexity given by twelve months American oak maturation. The palate is full and soft in the front and middle with flavours of small berry fruit, the oak complementing the fruit. The finish is medium firm with tannins coming from both fruit and oak. "The nose is awash with red berry fruits together with spices, roll onto the palate and combine to offer a softness in the mouth, a soft, easy-drinking wine packed with fruit flavour and interwoven oak!" -Education Sydney, "Comparatively restrained on nose, but comes into its own on the palate with lush dark berry fruit balanced by ripe tannins. Tim Adams Aberfeldy 2004

When the Birks family of Wendouree fame settled the area in 1904 they planted their site to Shiraz. The cropping level in the vineyard is never more than 1½ tonnes per acre, producing grapes with intense colour, flavour and tannins. "On any scale it's one of the best value reds in the country. He began his career as a cellarhand for the Stanley Wine Company, rising to the position of chief winemaker, and he also worked under the tutelage of Mick Knappstein. Adams objective with Clare Valley Semillon is to retain its freshness and authenticity. "Consistently one of the best semillons. Fergus was a neighbour who was kind enough to sell his Grenache to Tim Adams in 1993 during a desperate shortage of Shiraz and Cabernet. Tim quickly realized that which had been born from serendipity to have real potential as a full bodied, soft style with immediate food compatibility.
