	Faith’s vibrant yet dense purple hues hint at the generosity of fruit within. A remarkably approachable red, agreeable to all palates, most notable for it's appeal to the novice and connoisseur alike. Sourced from good Barossa vineyards, providing a cross section of flavours, a tightly structured, exceptional wine. 	Each $16.99 Dozen $203.88	Grapes are sourced from some of the finest Barossa vineyards, sited to superior appellations such as Lyndoch in the south and Koonunga in the north. The fruit is harvested during the warmth of the day, brought to the winery, crushed into fermenters and inoculated with neutral strains of yeast. Following a regime of four pumpovers daily, some of the parcels undergo malolactic in oak, whilst others remain in tank. The wines are lightly racked, taking the fluffier lees which add weight, texture and savoury characters. Assemblage into a tightly knit tapestry of flavours from the variations of climate and soils, followed by up to fifteen months maturation in a combination tanks and fine grained oak barrels. Approx 14.8%
	Dark ruby red. Pepper and spice bouquets mixed with ripe berry fruit, underlying smoke from the oak maturation. Dark cherry and sweet raspberry palate is complemented by chocolate and game flavours. Of medium weight, blackberry and pepper persist across the palate and ends with finely textured tannins delivering a pleasant, lingering mouthfeel. Sourced exclusively from sloped vineyards around the north and west of the Barossa, sub-regions which yield small crops of exceptionally concentrated berries. The northern sites of Kalimna and Ebenezer contribute juicy dark fruit and rich mocha flavours, while western sites such as Seppeltsfield give Blackwell it's muscular, brooding structure. St Hallett chooses individual sites each year for inclusion into the Gamekeepeer. Shiraz is sourced from a patchwork of vineyards scattered throughout the central and western districts of the Barossa which can yield parcels of intensely flavoured grapes. The Cabernet hails from cooler, slower ripening parts in the south. All during the ripening period, St Hallett's winemakers and team of viticulturalists spend time in the vineyards monitoring the sugar/ acid profiles and flavour development, co-ordinating the harvest to a schedule based on full physiological ripeness

An exclusive Shiraz articulating the concordance between the Barossa and Eden Valleys, derived from low yielding vines up to a hundred years of age. The meticulous nurture and respect for these Old Vines means parcels are culled from the pruning stage in the vineyard, throughout the vinification, until the final stage of sampling the aged wines, to determine the best barrels. Old sites in the warm nether parts of the Barossa establish the rich foundation, whilst higher, cooler aspects of the Eden Valley contribute lifted aromatics and seamless tannins

Poacher’s Blend embraces a spectrum of aromatics, from the fresh, tropical fruit flavours of Sauvignon Blanc to the greener, mineral of Semillon. Importantly, Semillon is picked at three different ripeness levels. The greener Semillon contributes natural acidity, a moderately riper component brings herbaceousness, and the fully ripe Semillon gives mouthfeel and richer grapefruit citrus elements. Sauvignon Blanc is picked relatively early to retain the gooseberry lift, importantly the Riesling component contributes backbone and floral lime citrus
