Rockbare Shiraz 2008
	Rockbare are heart, body and soul McLaren Vale. Fruit growers have been experiencing trying times of late. This has freed up some very old and precious Shiraz vineyards, which Rockbare have gleefully accepted into the fold. Tim Burvill is very gifted as a winemaker, and also as a raider of isolate parcels of mature vines. He retains access to some of the Vale's best Shiraz. In the vintages since inaugural release, a number of 50+ year old vineyards have come to light, which have been assembled into an immensely satisfying experience McLaren Vale Currently out of stock
	Each $17.99 Dozen $215.88	RockBare was born out of a desire to create wines out of Australia's best viticultural regions. Parcels of very old Shiraz fruit, some of it hand harvested, are treated to warm static fermentations on skins for ten to fourteen days at 22ºC No roto-fermenters used, preferring the tannin structure that results from an aerobic fermentation. Gentle pressing on skins using airbag press, followed by malolactic fermentations in barrel. The wines turn black as midnight as soon as they are crushed, and show an amazing tannin structure and varietal definition in the fermentations right from the word go. Maturation for fourteen months in a combination of new and prior use American and French oak. Alcohol 15.0%
	Sump oil black in colour. Full on scents of rich dark cooking chocolate that has just been melted in the pot, combined with a scrumptious Christmas pudding. There is also a noticeable mention of Satsuma plums, vanilla bean and dark cherries. If the wine smells like a Christmas pudding, it tastes like a chocolate pudding. Extremely rich and intense chocolate flavours will have you reaching for more than a glass and a half. Aside from the chocoholic kick, there are all the wonderful ripe blackberry fruits that McLaren Vale is renowned for--plums, blackberry and blueberry. Rockbare finishes long and smooth, with a subtle licorice aftertaste. Rockbare would perfectly suit a juicy Australian loin of lamb

It is from these wonderfully diverse old sites that Burvill selects the ripest and most concentrated fruit to produce Mojo. Mojo wines are in keeping with Tim Burvill's power packed fruit driven style. The moderately continental climate provides the ideal conditions for the production of full bodied reds. The crisp spring and early summer weather preserves the fruit’s natural acidity, which heightens and enhances the flavour of this noble variety. To accentuate the fruit freshness, Mojo have treated the wine to a cold fermentation which takes up to three weeks, but the result is worth the wait for the winemaker. A tremendous red emanating heat from it's weight of alcohol, the very first vintage of a mostly Grenache wine by RockBare, sourced from an eighty year old bush vine, dry grown vineyard.
