Vinification has always been the perfect illustration of Piper-Heidsieck's know-how. Each cru and grape variety is vinified separately. Reserve wines from earlier years are used to create a more rounded blend and ensure the originality of the Piper-Heidsieck style. Awarded 3 GOLD MEDALS and made exclusively from Cabernet Sauvignon, picked extremely ripe to maintain the full sweetness of the style, and sourced primarily from McWilliam’s own vineyards in the Riverina wine region in New South Wales. Partially fermented on skins for eleven days to extract maximum colour and flavour, a high quality grape spirit distilled at the McWilliam’s Hanwood winery, near Griffith was added to the ferment in stages to assist with the integration of flavour. Receiving no oak treatment, this is a maverick fortified, brimming with riddles and complexities.

The superior vineyard sits right on the edge of the Bremer River, flooded during the winter, it's nourished by rich alluvial soils that provide natural irrigation to the vines. GAM is an acronym of the Mitolo children's names, Gemma, Alex and Marco. Fashioned from the best Shiraz by Ben Glaetzer. A longer than usual vintage attributed to cool conditions during ripening which was welcomed by winemakers who reported that red wine quality is extremely good.
