	A finely crafted Heathcote wine which aims to epitomise the best that Heathcote has on offer. Sourced from a single vineyard at the very heart of Heathcote, a region that's renowned globally as a premium Shiraz producing appellation. The underlying Cambrian soils allow the vines to consistently produce ripe full flavoured fruit, rich in berry and spice flavours with deep colouring. 	Each $17.99 Dozen $215.88	Trentham Estate was once part of a large sheep station called Trentham Cliffs, settled in the 1930s by the Chanter Family. The winemaking team know that good wines are made in the vineyard, and are continually striving to source the best quality fruit on offer. Grapes from one of Heathcote's most superlative vineyard sites are harvested throughout the cool of the night at ripe and healthy Baumés, then immediately transferred to the winery for vinification. Fruit was crushed and fermented before pressing and transferring to a combination of fine French and American oak barrels for storage. After fourteen months maturation, the wine is revatted, assembled and bottled. Approx 14.5%
	Dense red colour. Ripe and earthy, rich and balanced showing ripe fruit aromas of pepper, plum and chocolate. Licorice and coffee notes weave through the dark berry flavours. The taste is rounded and long with the fruit sweetness balanced by fine oak tannins, lingering nicely on the fine grained, chewy finish. "A dark fruit n' chocolate bar with the works. Red Edge Heathcote Shiraz 2006

Heathcote specialist Peter Dredge has worked with Hoddle Creek Estate's Franco d'Anna, and with Ben Riggs at nearby Sanguine Esate. Planted in 1971 to ancient Cambrian soils, the unirrigated single parcel of mature vines at Red Edge yields a scant 1.0 to 1.5 tons of fruit per acre. A tiny tot of Riesling is added to this Shiraz and Mourverdre wine, contributing a spicey lift to the nose. "Rich and generous. Blueberry, plum and white pepper flavors are balanced with racy acidity that lets the juicy flavors finish expressively!" -Winespectator.com

Chardonnay from two sites of the Red Hill Estate's vineyards, the elevated cooler parts of the peninsula and the warmer more northerly regions, predominantly from the Range Road Vineyard. The blending of the various Chardonnay clones from the various sub-regions in the Peninsula combine to produce complexity and finesse. Over its second year, the fruit starts to emerge and the wine begins to come into beautiful balance. The fruit just continues to grow for another three or so years, and it is still later that honeyed, toasty characters start to add even further layers to the wine
