When it came to selecting a wine to dedicate to Peter Lehmann, it was not without a sense of irony that the choice should be Barossa Cabernet. 	Each $34.99 Dozen $419.88	From exceptional sites in the Ebenezer, Light Pass, Vine Vale and Tanunda sub districts of the Barossa Valley. Over the years vineyards have been identified which produce the best Cabernet wines, many planted over sixty years ago. These older, low yielding vineyards give fruit that displays classic lifted cassis and violet characters of great Cabernet Sauvignon. Mentor is fermented and matured in exclusively French oak hogsheads, which integrates seamlessly with the powerful flavours and structure of the wine. Fermented and macerated on skins for up to two weeks, followed by pressing and clarification, before maturation in French oak hogsheads for eighteen months. Alcohol 14.0%
	A deeply coloured wine with a dense centre. The nose exudes inviting aromas of classic Barossa Cabernet blackcurrant, mint and cedar box. The palate has a defined Cabernet cassis flavour, a touch of chocolate and vanilla, exhibiting a superb integration of oak and fruit. Mentor is designed to soften and increase in complexity, emerging as a wine of immense power and richness across the palate. The second of three consecutive great vintages for red, highly rated by winemakers for producing wines of great depth, flavour and richness, the quality of fruit demands that it be released as a pure varietal wine. A base of Cabernet Sauvignon with smaller components of Petit Verdot, Malbec or Merlot. As the vineyards that supply these grapes have matured, the yields of the different varieties have varied and so the percentages in the finished wines have also changed. The makeup of the vineyard is important in resolving two key issues, seasonal variations, dictated by mother nature and style, controlled by winemakers. Cabernet produces the best wine, but the other Bordeaux varietals can play an important role in maximising quality of the finished wine

Moss Wood Cabernet Sauvignon 2005

Moss Wood Cabernet Sauvignon includes portions of Cabernet Franc for its cherry characters and Petit Verdot which contributes bright berry aromas and a firmer structure. Moss Wood's Cabernet Franc shows less leafiness than Cabernet and can be picked earlier, when the varietal characters are fresh berries, similar to summer pudding. Further ripening tends to produce dark plum notes. While still slightly green, Moss Wood's Petit Verdot has an herbal note, more coriander than leaf, an ethereal, aromatic lift, redolent of violets and sweet red berries

Moss Wood was destined from it's very genesis to be one of the Margaret River's great Cabernet wines. Excellence is the estate's raison d'etre, all decisions made in the vineyard or at the winery are based on the effect they will ultimately have on the wine. Experimentation in the vineyard has been matched in the vinification, and Moss Wood has undergone subtle refinements. The wines are given longer skin contact time during fermentation, whilst the backbone of Cabernet is enhanced with small amounts of Cabernet Franc and Petit Verdot

Moss Wood Chardonnay 2008

Parcels consist of fully exposed grapes with no leaves, and others without leaf removal. The former is a more complex style of Chardonnay with accentuated malty and roasted nut characters while the latter tends to retain citrus, honeysuckle and peach blossom aromatics whilst looking prettier. Before assembling, there are extensive tastings to check on the choice of barrel and to compare the different levels of exposure. The results are fascinating. A grand total of just a few hundred cases are made, Moss Wood Chardonnay is always a beauty

A key to the success of Ribbon Vale is an astute understanding of how tannins develop during skin contact after fermentation. Through tasting, the right balance between fruit flavours, tannin and the correct time to press is struck. Merlot is a contrary beast, the two estate blocks give quite different results. The West Block has always produced higher yields, the East Block has more difficult conditions. The yield needs to be incresed in some instances and reduced in others. Merlot is the Goldilocks of grapes and the porridge has to be just right
